Easy Quesadillas for Kids – Quick Dinner for Picky Eaters

Crispy, cheesy quesadillas made in 10 minutes with hidden vegetables — a quick dinner for picky eaters that the whole family will love.

Ingredients

  • 4 small flour tortillas (6-inch)
  • 1 cup shredded cheddar or mozzarella cheese
  • ½ cup finely grated carrot
  • ¼ cup finely grated zucchini
  • 1 tablespoon butter or olive oil

Instructions

  • Grate carrot and zucchini finely. Squeeze excess water from zucchini using a clean kitchen towel.
  • Lay one tortilla flat and sprinkle cheese evenly over one half. Add vegetables on top of the cheese.
  • Fold the tortilla in half to create a half-moon shape.
  • Heat butter or olive oil in a non-stick pan over medium heat.
  • Cook quesadilla for 2-3 minutes until the bottom is golden and crispy.
  • Flip carefully and cook for another 2 minutes until golden and cheese is fully melted.
  • Cool for 1-2 minutes, cut into triangles and serve with mild salsa or sour cream.

Notes

For very picky eaters, start with cheese only and introduce vegetables gradually. Leftovers keep in the fridge for up to 2 days — reheat in a dry pan for best crispiness. Freeze uncooked assembled quesadillas for up to 1 month.
